Blessed with an abundance of tropical fruit, Bali provides lots of options for healthy desserts.
Banana Parcels with Chocolate and Rum
- 4 Banana leaves (or aluminium foil, cut to 25 cm sq)
- 4 Bananas halves crossways
- 80 gr dark chocolate
- 4 tbspn dark rum
- whipped cream or ice cream
Place the banana leaves on a work surface. On the first leaf, put two banana halves side by side. Sprinkle with 1/4 of the chocolate and 1 tbspn of rum. Fold up the sides and edges to make a square parcel. Tie with wet string, or raffia (soaking in water will prevent it from burning.) Repeat to make 4 parcels.
Put the parcels on a pre heated barbecue or oiled smoking hot stove top grill pan and cook for about 10 minutes on each side.
Snip the string and serve with whipped cream or ice cream
